Balsamic Strawberries & Cream

Every year, I look forward to all the amazing produce that summer brings as much as I do the warmer weather, the abundance of berries in particular.  At the height of the season, it almost seems like a crime to adulterate the beautiful flavors of fresh berries with too much else.  Less is definitely more in this case, and when it comes to harnessing the beauty of simplicity, I turn to the Italians for inspiration.

The classic pairing of balsamic and strawberries is a great way to add a little pizzazz to the fruit without overwhelming it.  It’s the perfect summer dessert for entertaining, with less than 5 minutes of hands-on prep time, because you want to be outside enjoying the sunshine with your guests, not toiling away inside the kitchen.  Use the freshest berries and best balsamic you can find.  I’m obsessed with this fig balsamic vinegar from Oil & Vinegar; syrupy and honey-sweet, it doesn’t take much to add impart a lot of flavor.  The strawberries have also been so sweet that the balsamic vinegar alone provides sufficient sweetness, but you an always add a bit of sugar or juice to taste if you prefer a sweeter result.

Ingredients (serves 4)

  • 2 pints (~750g) strawberries, washed, tailed and quartered
  • 2 tbs balsamic vinegar
  • 8 oz (225mL) heavy cream, whipped to firm peaks
  • optional : sugar to taste

Method

  1. Toss together the strawberries and balsamic vinegar in a mixing bowl until the berries are well coated.  Cover and refrigerate for at least 2 hours.
  2. Remove from the fridge, give the berries a quick, gentle toss and divide between 4 serving bowls or glasses.  Top with whipped cream to serve.
