Cheesecake brownies

The cheesecake brownies from Three Bags Full were so good, I had to try to make my own.  Takes next to no time to make these delicious, gooey brownie squares.


  • 1.5 cup plain flour
  • 1 cup caster sugar
  • 3/4 cup unsweetened cocoa powder
  • 1tsp baking powder
  • 1 cup water
  • 1/3 cup olive oil
  • 1 tsp vanilla extract
  • 1 tbs white vinegar
  • 250g cream cheese
  • 1/3 cup caster sugar
  • 1 egg
  • pinch of salt

1)  Pre-heat the oven to 180degC (fan-forced) and line a 20x30cm lamington pan with baking paper, making sure the paper extends over the long edge of the pan.

2)  For the cheesecake filling, place 250g cream cheese, 1/3 cup caster sugar, egg and salt into a mixing bowl and beat until smooth, using an electric mixer.  Set aside.

2)  To make the brownie mixture, sift the flour, cocoa powder and baking powder into a large mixing bowl.  Combine with 1 cup caster sugar and make a well in the centre of the mixture.  In a separate jug, combine 1 cup water, 1/3 cup olive oil, vanilla extract and white vinegar.  Pour the liquid mixture into the well in the dry ingredients.  Start stirring from the centre of the bowl and gradually draw more of the flour mixture into the liquid until all ingredients are well combined.  Don’t work the mixture too much.

3)  Pour the brownie mixture into the lined baking pan and spread out evenly.  Dot the mixture with tablespoons of the cheesecake filling.  Use a skewer or toothpick to drag the cheese through to the chocolate to create a marbling effect.  Bake in the pre-heated oven for 20-25 minutes until a skewer inserted into the brownie comes out clean.  Cool on a wire rack before cutting.

    They look good! How did they compare to the cafe ones?

      The brownie turned out quite different- more dense and chocolate-y and not as sweet (probably because I used raw caster sugar). I think the brownies from Three Bags are also dipped in icing to give them a sweet, crunchy base. Makes it easier to eat more of these ones, although I’m not sure if that’s a good thing 😛

    I adore cheesecake brownies, though I opt for a slightly simpler method. These look great, far better than my version 😀
