Bun bo xao (Vietnamese beef stir-fry with vermicelli noodles)

Ingredients (2 serves)

Beef stir-fry:

300g lean beef, cut into strips

1 medium brown onion, sliced

1 stick lemon grass, finely chopped

1 small red chilli, finely chopped

2 cloves garlic, minced

2tbs fish sauce

1tbs olive oil



½ cup fish sauce

½ cup white vinegar

1 tbs brown sugar

½ cup warm water


2 squares dried vermicelli noodles

2 cups shredded lettuce

1 small Lebanese cucumber, cut into strips



1)      Combine two thirds of the lemon grass, garlic and chilli with 2tbs fish sauce in a mixing bowl.  Add the beef strips, mix well, cover and refrigerate for at least 2 hours.

2)      Heat 1tbs olive oil in a frypan, then add the rest of the lemon grass, garlic and chilli and sauté until fragrant.  Add the sliced onion to the pan and cook until the onion softens.

3)      Push the onion to one side of the frypan, then add the beef and cook until browned.  Stir to mix thoroughly.

4)      Cook the vermicelli noodles according to packet directions.

5)      For the sauce, dissolve the brown sugar in ½ cup of warm water.  Then add ½ cup fish sauce and vinegar and combine well.  Adjust to your taste.

6)      Divide the lettuce and cucumber between 2 serving bowls.  Top with noodles and beef and serve with the sauce.
