Chilli and coriander crusted salmon with garlic gai lan

Ingredients

2oog salmon fillet

½ cup of fresh breadcrumbs

1tbs finely chopped coriander

1tsp finely chopped red chilli

2tbs olive oil

Salt and pepper to taste

 

1 small bunch gai lan (“Chinese broccoli”), washed and cut into batons

1 clove garlic, finely chopped

1tbs olive oil

 

1)      Preheat the oven to 180degC fan-forced.

2)      Wash and debone the fillet of salmon.  Season both sides with salt and pepper.  Pan-fry, skin-side down for 3 minutes until the skin crisps up.  Transfer, skin-side down to a baking tray.

3)      Combine the bread crumbs, coriander, chilli and 2tbs olive oil in a bowl.  Season with salt and pepper.  Spoon the mixture onto the top of the salmon and press down firmly with a spoon to form a crust.  Bake for 12 minutes until the breadcrumbs are golden and the salmon is still slightly pink in the middle.

4)      While the salmon is in the oven, heat a wok until you can see smoke coming off the surface.  Add 1tbs olive oil to the wok.  Saute the garlic until fragrant, then add the gai lan.  Toss the vegetables to coat them in the garlic oil, then add 2tbs of water, cover and cook for an additional 3 minutes.

Transfer the gai lan onto a serving plate and top with the salmon
