Cheese and spinach chicken rolls with spicy tomato sauce

Ingredients (2 serves)

4 free range chicken thigh fillets

1 cup chopped spinach

4 tbs cottage cheese

1 red onion, diced

1 red capsicum, diced

1 clove garlic, finely chopped

1 small red chilli, finely chopped

1 tin chopped tomatoes

2 tbs olive oil

Salt and pepper to taste

 

1)      Preheat the oven at 200degC fan-forced.

2)      Trim the fat from the chicken thigh fillets and flatten them out, ready for rolling.

3)      Quickly blanch the spinach with some boiling water and then drain immediately.  Mix the cottage cheese with the spinach.

4)      Spread about 1½ tbs of the cheese and spinach mixture onto each chicken fillet and then roll them up.

5)      Heat the olive oil in a frypan and sear the chicken parcels on both sides until brown.  Transfer the chicken into an oven-proof dish that is just large enough to hold all the chicken rolls.

6)      Using the same frypan, sauté the garlic until fragrant, then add the onion, capsicum and chilli and cook until the onion is slightly translucent.  Then add the tin of chopped tomatoes and simmer uncovered for another 2 minutes.  Season with salt and pepper to taste.

7)      Pour the tomato sauce over the chicken and bake uncovered for 20 minutes until the chicken is cooked through.
