Bircher muesli

Seeing that my blog has so far been dominated by posts about great breakfasts, it seems only logical that I share some of my own breakfast recipes.  And there’s no better way to start the day than with a healthy and delicious bircher muesli (we’ll save the scrambled eggs and sausage for weekend indulgences).



Ingredients (2 serves)

1 cup rolled oats

½ cup milk

½ cup fruit juice (I like to use Emma and Toms- very nice combinations)

4 dried apricots, chopped

2 tbs plain yoghurt

small handle of slivered almonds or chopped nuts of your choice

1 apple, grated

extra yoghurt, fresh fruit and honey to serve

The night before:

Place the oats, milk, fruit juice, chopped apricots, nuts and 2 tbs yoghurt into a large bowl.  Combine thoroughly, cover and refrigerate overnight.

In the morning:

Mix the grated apple with the muesli.  Divide between two serving bowls.  Serve with the extra yoghurt, fresh fruit and a drizzle of honey (paw paw, stonefruit and berries are delicious with this muesli).


How easy is that!
